The Legend of Saint Eulalia
Legend has it that, as a taunt from their neighbours, the name ‘Encaulats’, meaning ‘cabbage-eaters’, was given to the inhabitants of the village because there were cabbages in every garden. But following periods of famine, everyone came to appreciate having cabbages to eat. From then on, the name ‘Encaulat’ was borne with pride. Since the year 2000, the residents of Sainte-Eulalie have been gathering every year for a huge cabbage-themed feast during the winter months!

Vente aux enchères "la Poule UN" à Ste Eulalie d'Olt
Every year on All Saints' Day, Encaulats and tourists alike flock to the village square for a very special auction: La Poule Un.
At the foot of the cross, in front of the church, on All Saints' Day, the famous ?la Poule Un? auction takes place this tradition brings all parishioners together in the village square for an original auction, which, until the arrival of the euro, was expressed in old francs. One by one, the "auctioneer" displays the gifts of the inhabitants. First, a hen (La Poule Un), then eggs, sacks of walnuts, brandy... to be used to pay for masses to redeem souls in purgatory.
