How are MICHELIN stars awarded?
Just like Les Plus Beaux Villages de France, the MICHELIN® Guide is based on a rigorous selection process and criteria for awarding its ‘stars’!
The ‘inspectors’, former hospitality and catering professionals, visit establishments anonymously and behave just like any other customer. After their tasting, their assessment is guided by several criteria. Among the main ones are:
- the quality and freshness of the produce,
- the precision of cooking techniques,
- the harmony of flavours,
- the creativity of the dishes,
- the quality of service,
- value for money,
- ...
Stars are awarded during a meeting between the guide’s editor-in-chief, the inspectors who have ‘tasted’ the establishment’s cuisine, and the International Director of the MICHELIN® Guide. The decision must be taken collectively: if a disagreement arises amongst the inspectors, further visits are organised to the establishment in question until a consensus is reached.
